Auntie Margaret’s Fajitas
Fajitas are the ultimate hands-on, flavor-packed Tex-Mex experience: tender strips of marinated chicken, steak, shrimp, or veggies seared until caramelized and tossed with sweet bell peppers and onions.
Ingredients:
• 1lb, Chicken Breast (cut in strips)
• 1Packet Hidden Valley Ranch Dip Mix
• 1Packet Fajita Seasoning Mix
• 1 16oz Jar of Salsa
• 3 Bell Peppers (Orange, Red and Yellow)
• 1 Large Sweet Onion
• 1tbsp, Vegetable Oil
Add Salt and Pepper, to taste.
Directions:
- Prep the ingredients by cutting Chicken into strips about ¼ inch thick. Cut the Bell Peppers into thin strips and remove seeds. Slice a whole medium onion in ½ and then cut into long slices (do not dice).
- In a large skillet add the oil and place over a high flame, bring up to a frying temperature.
- Add the bell peppers and onions and season with salt & pepper. Sauté for about 5 minutes on high heat to allow peppers to soften and onions to be translucent.
- In a bowl (on the side) add the chicken strips and both dry packets. Mix together well to allow chicken to be fully seasoned.
- Remove the pepper’s and onions and place into another separate small bowl.
- Place the seasoned chicken in the skillet. Sauté for about 10 minutes or until chicken is fully cooked (juices will run clear).
- Combine peppers, onions back into the skillet with the fully cooked chicken. While adding the 16oz jar of your favorite Salsa.
- Reduce heat to medium flame and allow to cook an additional 5 minutes to allow the salsa to heat up.
- Serve with warmed tortillas and sides of: sour cream, guacamole and shredded cheese.
