Ingredients:
Prep:
• 2lb, Chicken Wings
• 1tsp, Shredded Ginger
• 1c, Water
• 2tbsp, Oil
Sauce:
• 9tbsp, Oyster Sauce
• 4tbsp, Soy Sauce
• 6tbsp, Dry Sherry
• 3tbsp, Sugar
• 1 Whole Scallion, Chopped
Cornstarch Paste:
• 2tbsp, cornstarch
• 1/4c, water
Directions:
To Prepare:
- Breakdown chicken wing into 3 parts, discard tips.
- Have Sauce, Cornstarch Paste and other ingredients ready.
To Cook:
- Heat a 12" skillet over high heat, then add 2 tbsp. oil. When oil is hot, add ginger, stir for a few seconds. Add chicken wings and sauté until wings are lightly browned (may take about 5 minutes). Drain off excess oil.
- Add Sauce, cook over high heat for 2-3 minutes then turn to medium heat.
- Add 3/4 cup water, cover and simmer (braise) for about 15 minutes. Stir a few times to prevent wings from sticking to skillet.
- Add Cornstarch Paste, stir until sauce is thickened. Serve over rice as a stew.
